Cosy Autumn Lunches For Your Toddler: Easy Keep-Warm Recipes

Autumn Recipe Ideas

Orange and Pumpkin Soup

Ingredients

  • 500g pumpkin
  • 1 onion
  • 2 potatoes
  • Juice from 2 oranges
  • ½ teaspoon grated ginger
  • 1 litre of stock
  • 25g butter
  • Salt and pepper to season

Method

  1. Wash, peel and chop the veggies.
  2. Melt the butter in a large saucepan and add prepared onion, pumpkin, potatoes and grated ginger. Sauté for a few minutes until the ginger is fragrant.
  3. Add stock and orange juice, and season lightly to taste. Bring to a boil.
  4. When veggies are soft (approx. 10 minutes later), remove the saucepan from the heat. Blend the soup until it’s perfectly smooth.
  5. Serve it with a dollop of yoghurt for some extra creaminess or, for the grown-ups, a sprinkle of chilli flakes to turn up the heat.

 

Pulse Pasta with Nut-Free Pesto

Ingredients

  • 1/4 cup sunflower seeds lightly toasted
  • 1/4 cup parmesan cheese grated
  • 2 big handfuls fresh basil rinsed
  • 1/2 cup olive oil
  • 1 garlic clove peeled
  • 1/2 lemon juiced
  • Pinch of salt to taste
  • 1 cup pulse pasta

OR

  • 2 tbps of store-bought nut-free pesto
  • 1 cup pulse pasta

Method

  1. Add sunflower seeds, parmesan, basil, oil, garlic and lemon juice in a food processor and blend until smooth. Add salt to taste and/or more lemon juice if needed.
  2. Cook pasta by following the instructions on the packet. Once cooked, drain the pasta and add to a pan, stir through 1-2 tbsp of pesto mixture to heat through.
  3. Prepare the b.box insulated food jar and add your pesto pasta.

 

Fancy 2-Minute Noodles

Ingredients

  • Packet of 2-minute noodles
  • 1 egg lightly beaten
  • 1/4 cup frozen peas
  • 1/4 cup frozen or tinned corn

Method

  1. Discard the noodle flavour sachet and follow the packet instructions to cook noodles.
  2. Cover peas and corn with boiling water and stand for a few minutes. Drain.
  3. Drain noodles and return to the pan. Mix through peas, corn and egg over low heat until the egg is cooked.
  4. Prepare your b.box insulated food jar and spoon noodles inside.

  • Preheat your jar by filling it with boiling water for a few minutes, then emptying it before adding food.
